How to do it

In a bowl mix lemon grass, garlic, shallot, fish sauce, soy sauce, oyster sauce, honey, black pepper, and chili flakes

Add the chicken and coat evenly let it marinate for at least 30 minutes or overnight for deeper flavor

Heat oil in a large pan or walk over medium high heat, add the chicken and cook for 4-5 minutes, steering occasionally until caramelized and golden brown. Remove the chicken and the city side.

In the same pan toss in the red and green peppers and onion. Stirfry for two minutes until slightly soft but still crisp.

Add soy sauce, fish sauce, sugar, and water, and then stir to coat evenly

Return the cooked chicken to the pan and toss. everything together. Stirfry for another one or two minutes until well-combined and glossy.
