Gehacktballetjes (vegetarische slager)

Tin of diced tomatoes
1 middle sized
Onion
200 g
Couscous*
100 g
Mixture of dried apricots (halved)and raisins*
2 twigs
Chopped Basil leaves*
2 twigs
Chopped Parsly leaves*
1 twigs
Chopped Lavender leaves*
1 twigs
Chopped Rosemary leaves*
1 twigs
Chopped Thyme leaves*

Courgette

*=can be found ready to use in the AH Marrocan Couscous fresh vegetable mealbox.

How to do it

Chop onion in middle size pieces. Mix couscous with the dried apricots and raisins in a bowl. Add 250ml boiling water and leave to rest for 10 minutes till serving.

Fry onion in some olive oil. Add the vegi balls and chopped courgette. Add the marrocan herbs. After 8 minutes add the tin of tomatoes and heat until ready to eat.

Serve and enjoy!

I like to knie of the herbs must je chopper of added in whole. And where do you find lavender other than in your garden (it’s not growing now).
