2 middle sized
Sweet potatoes
125 gram
Kidney beans
125 gram
Corn

Onion

Tomato
20 gram
Grated cheese
2 spoons
Sour cream
Lime
Parsley

How to do it

Preheat the oven at 180C. Clean the sweet potatoes and make small holes all around the potato with a fork. Spray it with olive oil and salt + pepper and put in the oven for 1 hour (or until its cooked - depending of the size of the sweet potato)

In the meantime cut the onion and tomato in small pieces and mix with the corn and kidney beans. Add salt and pepper to taste.

When the sweet potato is soft and cooked cut in half (not all the way through) and fill it with the beanmix. Top it with the grated cheese and put it back in the oven for 10 minutes.

Serve with the sour cream, Parsley and lime juice.
