How to do it

Grate the zucchini, gather in clean kitchentowel and wring out water. Put in bowl.

Cut the fresh spinach leaves loosley in edible pieces, divide over 2 plates.

Cut the onion in very thin rings and chop half of it. Divide the thin rings over the plates and add the chopped onion to the zucchini.

Cut the cherry tomatoes in thin rings and add to zucchini.

Add two eggs to zucchini mixture and salt and pepper. Mix.

Add quinoa and crumbled feta.

Cut mushrooms in quarters.

Heat some olive oil in two seperate baking pans . One for the mushrooms/garlic and one for the zucchini cookies.

Fry until done , spread over the plates and serve with lemon parts chopped parsley and half avocado.
