Vegetable stock

Coconut milk

How to do it

Peel the ginger and cut in pieces. Also cut the onion. Heat the oil in a soup pan and bake the onion, ginger and garlic.

Wash and cut the carrots. Add them to the soup pan and bake for 5 minutes. Add the vegetable stock and the coconutmilk and boil it on low fire until the carrots are cooked (+- 15 min)

Use a handblender to puree the soup. Add the juice of the orange and stir. Add salt and chili flakes to taste and serve!
